"MERKEN-FUMET", "MERKEN-AHUMADO".

    ...  "MERKEN FUMET" .: "M-F" (mr,) =========================== What is the difference between MERKEN ESSENCE and MERKEN EXTRACT?.... According to MEICO recipes.   MERKEN...: "CACHO DE CABRA" CHILI, DRIED, SMOKED, CHOPPED WITH COARSE SALT AND CORIANDER SEEDS.     THE "CACHO DE GOAT" CHILI: Capsicum annuum, widely consumed by the native peoples of Chile, even before the arrival of the Spanish.... It was dried in the sun and coarse salt was added to make it easier to grind.... It was the main ingredient in stews even before the discovery of Chile. Then coriander seeds (culantrum) were added. There are a thousand ways to manipulate "Cacho de goat" chili (chili pepper), which is mainly consumed dry/dried....whole, smoked and crushed, including pastes and mixed with olive oil or other commercial additives. .... But at the moment THERE IS NO MERKEN ESCENCE....that is, a natural product that has the same properties as SMOKE...

  "MERKEN FUMET" .: " M-F" (mr,)  ..... ahumador instantaneo.....SABOR INTENSO. =========================== ¿ Qué diferencia hay entre ESENCIA DE MERKEN y EXTRACTO DE MERKEN ?.... Según las recetas del MEICO.   MERKEN...: AJI "CACHO DE CABRA", SECADO, AHUMADO , PICADO CON SAL GRUESA Y SEMILLAS DE CILANTRO.   EL AJI "CACHO DE CABRA" : Capsicum annuum, muy consumido por los pueblos originarios de Chile, aun antes de la llegada de los españoles.... Era secado al sol y se le agregaba sal gruesa que facilitaba su molienda....era el principal ingrediente en los potajes aún antes del descubrimiento de Chile. Después se le agrego semillas de cilandro ( culantrum ) Existen mil formas de manipular en ají ( guindilla-chile ) " Cacho de cabra", el que principalmente se consume seco / secado....entero, ahumado y chancado , incluidas pastas y mezclado con aceite de oliva o con otros agregados comerciales.....   Pero de momento NO HA...

 ...  RECETA DE “ REINETA A LA PLANCHA AHUMADA AL INSTANTE”  ==================================================  Autor:: MARIO DE LA FUENTE FERNANDEZ   La plancha BIEN CALIENTE se rocía con “MERKEN-FUMET”   Ingredientes para 4 personas:   1.- Reineta de aprox. 2,oo kls. Los 4 filetes que resulten pesan aprox, 300 grs. cada uno, total 1,200 kls. aprovechable.   2.-Verduras: Zanahoria, ¼ Kl. Tres unidades. Calabacin, ¼ Kl. Una unidad mediana; 1 pimenton verde ¼ de Esparragos 250 gr. de cebolla picada a cuadros ¼ de Champiñones Bajocas verdes ( judias ) ¼ kl. porotos verdes Cibulett ( cebollines nuevos ) finamente picados.   3.-Saborizantes: Aceite de Oliva;, extra virgen y sabor intenso “MERKEN-FUMET” SABOR INTENSO o sabor ajo- romero (menos intenso) O “ sal; akinomoto; Merken-FUMET; ( guindilla ahumada  esencia ) Sal ahumada.
